How are your plans coming for the holidays? Tis the season (already!).

The menus this week will help me calm down and I hope they do the same for you. This time of year is very busy which can be quite stressful but we can do something about that with the menus we choose. You will find the menus this week are economical and hearty; many of them are my personal comfort foods.

I do enjoy having guests in our house! We will be hosting a small buffet party Friday night so I have selected Shrimp and Grits. This is a menu that we serve as brunch during our holiday family get-togethers. It is easy to prepare and the flavors are warm and soothing. This will really get me 'in the mood' for family times to come as well as enjoying our guests Friday night.

For a speedy appetizer course for the party, I will serve a wedge of brie, smoked salmon on cucumber slices with a dollop of sour cream and fresh dillweed sprig, a quick dip of yogurt with Maya Kaimal's Vindaloo spooned in to taste, bagged & precut veggies, and assorted crackers, baguettes, and bread sticks. This covers the bases for my vegetarian guests along with those preferring mild, medium, and hot foods.

You will find that I use several cooking methods, mix and match, to get dinner on the table quickly! You can always substitute your favorite made-from-scratch recipes when you have more time.

I hope you were strong. I hope you didn't let the diabolical marketers who put the Halloween candy out in July or August entice you into buying it, seeing it around the house, and then eating it so you were forced to buy it again. Personally, I think there should be a law that stores cannot put Halloween candy displays out before September 15th (or later). Write your representative.

But the day is here, and in theory, adorable tots should be showing up at your door to remove all the calorie-laden goodness and take it home to ruin their dinners for many nights to come. But if you're like me, and you live on a major street in a safe, kid-friendly neighborhood, you've laid in enough candy to decorate every witch's house from here to Düsseldorf, and that means you're going to have leftovers. So unless you want to fit into that Santa suit without padding by Christmas, it's time to get creative.

The simplest solution is to avoid leftovers in the first place by becoming increasingly generous as the evening wears on. If you're giving out one or two pieces of candy early in the evening, and you can see that you're going to have more candy than you need, start passing out double portions. The older kids tend to be the ones out well after dark, so it actually makes sense to hand out more candy per trick-or-treater at 8:00 than you did at 6:45. If you play your cards right, you can empty your candy bucket and turn your lights out when the traffic dies (around here, that's between 9:00 and 9:20).

If November 1st still dawns with pounds of sugary bliss left in your living room, start looking for places to give it away. A lot of schools and churches have leftover candy drives. Take it your next meeting. Take it to the police or fire station. Do not take it to work, as it will sit in a bowl on your desk and you'll still eat most of it. Look for places to take it so that other people will eat it.

If you really want to get creative, and you can do some advance planning, start looking at the candy in a new way. If you do Christmas baking like I do, you will soon be buying the ingredients for that baking, and if you think about it, you're going to be buying a lot of the same stuff you just gave away. Next year, before you buy your Halloween candy, take a look at the recipes for your Christmas baking. M&Ms can go into cookies and Rice Krispies treats. Hershey Kiss cookies? Hershey's Special Dark bars and nuggets can be chopped into chocolate chips or melted down for icings, fillings, and more. Jolly Rancher candies and Life Savers make gorgeous "stained glass" cookies. Do a search for "leftover candy recipes" and you'll probably find some way to use up whatever you're stuck with, and you might find a new recipe you really like.

If you don't bake, you might have a neighbor who does, and you can work a trade of ingredients for finished baked goods. If you like toppings on your ice cream, you can crush most chocolate candy bars into sundae toppings. Crush them up and place them in well-marked bags in your freezer; that way, they'll be out of sight (and hopefully out of mind) and you'll use them by the spoonful instead of by the bar. If you are really virtuous, you'll simply buy candy you don't like yourself, so you'll never be tempted by the leftovers. Write and tell me what that kind of virtue feels like, because I sure don't have it.

The bottom line is, get them gone. Get them out of the house entirely, or earmark them for another purpose and get them into the freezer. Otherwise, you'll hear them calling you in their little chocolate voices every time you pass by the bowl. And you don't want to pack on extra pounds now, because turkey, stuffing and pie are waiting right around the corner. Boo!

Finding the right balance of healthy food that kids will eat at parties can be quite a challenge, particularly with the popularity and brand recognition of fast foods. However, with a bit of creativity and effort you can make healthy food look appetizing and fun to eat and here are a few tips.

Instead of serving bread with hundreds and thousands/sprinkles on it, make a variety of sandwiches with different fillings, for example cheese, ham, tuna, egg, cheese and tomato or tuna and sweet corn. Small, quality sausages, such as chipolatas are also an excellent addition to any party and popular with children. The children are more likely to eat these if you present them in a fun way.

Instead of lots of chocolate, place dried fruit on toothpicks, ensuring that you use a variety off different colors to make it look fun. You can also have muesli bars and you can buy carob coated rice cakes. You could also make carob coated chocolate rice krispies treats. You can use cornflakes as a wheat free alternative but please ensure that you check the package in case of children with allergies.

If you want to offer vegetarian, dairy free or wheat/gluten free party food, then here are a few different ideas for you to try:-

o If you are able to locate them, Scottish oatcakes (some oatcakes may contain wheat or gluten - check the packages for further details) are an excellent choice served with tuna and sweet corn.

o For a sweet idea, rice cakes with a carob chocolate topping or for a savory idea, you could add some cheese, pineapple, aubergine (eggplant) or a variety of pureed vegetables. Make sure that these are colorful to attract the children's eye.

o You can add cheese to muffins (you can make these gluten free) and place them under the grill. Try placing some fruit and shredded zucchini (courgette) inside them also. You can also make them into little pizzas and get the party boy/girl to help you make them.

o Waffles are also another good idea (these may not be gluten free though) and you can add all sorts of things, for example pureed fruits as a sweet alternative or freshly cooked beans as a savory topping.

o Tofu (bean curd) can also be used, although to make this attractive to children, you will need to ensure that you serve it in an interesting way. One way to do this is to slice the tofu finely and then dip it into some beaten up egg. Then add some sesame seeds and shallow fry it, serving it hot. The adults may prefer this but nothing ventured nothing gained!

o Home made pizzas cut into small rectangles, so that the children can eat them easily. You can add all sorts of different flavors and pineapple and cheese, tomato and cheese, or grated vegetables and cheese are excellent vegetarian choices. If you have someone at the party who cannot eat wheat or is a strict vegan, you can then add soya cheese and use wheat free dough. You can ask the party girl/boy to help you make them into funny faces. Getting the children involved with what you are doing is always a great idea, since they will then enjoy their party more as they have participated in the food preparation.

o You can also offer a variety of foods on a stick, for example cheese or fruit cubes.

o Falafels (a Lebanese delicacy made with chick peas).

o Rice crackers or pitta bread served with hummous and avocado dip, with carrot, zucchini and celery.

Baked Chicken Drumstick Recipe

Chicken drumsticks are a children's and adults favourite alike being really simple to prepare and cook especially in the oven. But what is the best way to bake chicken drumsticks and what is the best recipe to bring out the full flavour of the leg meat? I think we all know about KFC chicken and the crispy seasoned flour which is deep fried in hot oil giving wonderful results. I also know that many people have tried and failed to understand exactly what is the secret ingredients of KFC chicken but as far as I know this still remains a closely guarded corporate secret and rightly so.

But what other seasonings can we use to flavour our baked chicken legs? one of my favourite (and my kids!) is using crushed cornflakes as the basis of what would normally be breadcrumbs. This gives a much lighter texture to the chicken and remains crunchy and flavoursome after cooking. This is also a great chicken drumstick recipe which you can get the kids involved. But do not be fooled, just because its great for the children doesn't mean us adults will not enjoy it, give it a try and you will see what I am talking about, scrumptious!

Baked Chicken Legs Recipe (coats around 8 chicken legs or quarters)

8 x Chicken legs or quarters with the skin removed (really do ensure you remove the skin, you will get a watery effect under the skin itself if you do not remove it first)
3 x Cups of ground up cornflakes (you can also use Weetabix!)
2 x Teaspoons of Cayenne pepper
2 x Teaspoons of mild Curry powder
1 x Teaspoon of garlic powder
1 x Teaspoon of salt
1/2 Cup of plain flour
1/2 pint of milk
2 x Eggs beaten

Method

1. Pre heat oven to 200 degrees and remove skins from chicken legs
2. Place flour and salt in a clean bowl
3. Place beaten eggs and milk into another bowl
4. Crush cornflakes to breadcrumb size in a clear, clean, plastic bag and add the spices shaking to mix thoroughly
5. Coat chicken in the flour shaking off any excess and dip into the milk/egg mixture and carefully place into the bag. Repeat for four chicken legs and then gently shake to coat evenly.
6. Repeat the above for the remaining 4 chicken drumsticks.
7. Place the coated chicken drumsticks on a baking tray and give a spray of oil.
8. Bake in the oven for around 40-45 minutes until golden and cooked through.

A really tasty and crunchy chicken leg coating which is great fun to make. Enjoy your cooking!

With Valentine's Day right around the corner, considering making some easy Valentine's snacks that the little ones can bring to school? Whether you are preparing them for your own child's lunch or as a special treat for the class, here are some snacks that are easy to transport and easy for the little ones to devour once they dig in!

Marshmallow-Popcorn Hearts are a simple alternative to popcorn balls. With this recipe, you can skip the Karo syrup and just melt some marshmallows instead! This quick and easy recipe works just like Rice Krispie bars, only with popcorn instead!

Here's what you need to get started:

o 10 cups popped popcorn
o 3 tablespoons margarine or butter
o 1 10-ounce package regular marshmallows
o Red food coloring
o Red colored sugar

Directions

o Put the popped corn (minus the unpopped kernels) into a 13 x 9 x 2 inch baking pan and keep it warm in your 300 degree oven.
o Melt the butter/margarine and marshmallows in a large kettle or in the microwave. (Microwave: 1 ½ to 2 minutes, stirring once) Stir the mixture until it is smooth, no lumps, and then add the red food coloring.
o Stir in the popped popcorn- about half at a time.
o Wait 10 minutes or so until it is cool enough to handle.
o Grease individual heart shaped pans with butter.
o Press the popcorn mixture into the greased pans.
o Cool the popcorn hearts. Remove from pans. Sprinkle each with red colored sugar.
o Wrap each individually in plastic wrap- pink or red finishes it off nicely.
o Makes 9 hearts.

This one is a little messy, but for an extra-special treat, exceptions can be made to almost any rule. Take along a pre-packaged wet napkin in a zippered plastic bag to assist in quick clean-up.

Candy Apple or Caramel Apple Valentines

1 bag of caramels
1 pack of craft sticks (like popsicle sticks)
1 bag of apples or your choice
wax paper
cake decorating tool
Flavored icing

Melt the caramels or hard candy according to the package directions. Insert a craft stick into one end of each apple. Dip the apple into the melted caramel, covering it completely. Lift the apple and let it drip for a few seconds and then set it on the wax paper until completely set- about two hours) Use your cake decorating tool (or a plastic bag with a hole in the corner and a decorating tip) to write a nice message on each apple. Wrap in plastic wrap and secure the wrap at the top of the apple with a rubber band, leaving the stick exposed as a handle.

Finally, you can mix up these peppermint stars from a quick meringue batter. They make a tasty little treat that travels well in a lunch.

Peppermint Stars
Makes: 45 cookies
Prep: 30 minutes
Bake: 15 minutes

Ingredients
o 2 egg whites
o 1/2 teaspoon vanilla
o 1/4 teaspoon cream of tartar
o 1/2 cup sugar
o 1/4 teaspoon peppermint extract
o Red food coloring (optional)

Directions

1. Place egg whites in a medium mixing bowl; let stand at room temperature for 30 minutes.
2. Line two large cookie sheets with brown paper or foil; set aside.
3. Add vanilla and cream of tartar to egg whites. Beat with an electric mixer on medium to high speed until soft peaks form (tips curl). Gradually add sugar, 2 tablespoons at a time, beating until stiff, glossy peaks form (tips stand straight) and sugar dissolves. Quickly beat in peppermint extract. Tint pink with several drops of red food coloring, if desired.
4. Using a pastry tube with a large star decorating tip, pipe cookies onto prepared cookie sheets (form cookies about 1-1/2 inches in diameter). Bake in a 300 degree F oven for 15 minutes. Turn off oven and let cookies dry in oven with door closed about 30 minutes. Remove from cookie sheets. Cover and store in a dry place. Makes 45 cookies.

You are probably saying that health experts suggest you eat snacks during the day, and "snack-bars', as an obvious choice. But in this passage to the supermarket on foot and you have light colors, health claims and messages bombarded on every box. What are the best choice and which are more camouflaged candy bar?

Nutrition information: 140 calories and 9 grams of fiber, but also has 10 grams of sugar and only 2 grams of protein. In addition, these bars contain high fructose corn syrup and hydrogenated coconut oil. On the other hand, I recommend fiberA cereal for breakfast or eat (mix of nuts and dried fruit, trail mix fantastic home-made) for a snack. A half cup has only 60 calories and 15 grams of fiber.

All-Bran has a bar that give me an honorable mention. It advertises 20% of the daily requirement of fiber on the label. Each bar has about 130 calories, 5 grams of fiber, only half a gram of saturated fat and refined grains. And 'moderately high sugar content to 11 grams, but at least it comes with a decent dose of fiber. InPost Raisin Bran cereal contrast, have mixed bars only 3 grams of fiber and certain refined "wheat flakes" in their grains. Even lower on the bars Raisin Bran Crunch Kellogg constant would be - have more rice than any whole grain products, so that each bar with only one gram of fiber. Because even bran in the name of this bar?

Kashi is a trademark of my current favorites. Now they have hot and cold cereals, cereal bars, snack bars, and yes, you heard it here, Cookies!, From allseven grain mix with their signature. A cookie with 3-4 grams of fiber, a dream come true nutritionist. Your TLC crunchy and chewy granola bars, snack bars and their GoLean options are great for snacks on the run. The granola bars have 4 grams fiber, 7 g protein and 5-7 grams of sugar. The bars have 6 grams of fiber and 9-12 grams of protein. (The numbers vary according to taste). In addition, all natural ingredients - no sugar-based orhydrogenated oils.

As you can see, it's all relative. Kashi remains my first choice of brand. Note, however, keep in mind the following tips in checking food labels: Look for at least 4 or 5 grams of fiber and protein and less than 10 grams of sugar. Read the ingredient list. And 'nice and short? You can speak a word? Going with the old adage that "we are what we eat", it's nice to be able to pronounce, at least, what we put in our bodies.

Snack! Withoutsources of constant energy throughout the day, your mental clarity and mood surely suffer. If you do not believe it - ask your employees or family members. You may notice a couple of mood swings, according to the last time you ate that day.
